Strawberry Soup

3 pts. fresh strawberries
2 1/2 c. fresh orange juice
1/4 c. Grand Marnier liqueur
1-3 tbsp. sugar to taste
1 c. creme fraiche (see recipe below) make two days ahead
Fresh mint leaves

1. In blender or food processor fitted with steel blade, puree berries until smooth. Pour into large bowl.
2. Add orange juice, Grand Marnier and sugar. Whisk in creme fraiche until well blended. Chill for 1 hour.
3. Serve in shallow soup bowls. Place mint leaves on each bowl.

CREME FRAICHE:

1/2 c. heavy or whipping cream (not ultra pasteurized)
1/2 c. sour cream

In small bowl whisk the creams together. Pour in clean jar, cover and let stand in warm place for 12 hours.
Then stir and refrigerate for 24 hours. Yield: 1 cup.
